Cindi's Everyday Waffles (Rachel's Favorite!)

I have been making these waffles for more than 30 years! My best friend's daughter (whom I claim as my honorary daughter) says that they are the "best waffles in the whole world!!" I have to make them for her any time there is a visit. There is never a crumb left!

Prep Time: 10 Minutes
Cook Time: 10-15 Minutes
Total Time: 20-25 minutes
Yields: 6 Belgian Waffles | 8 Regular Waffles
Ingredients
1 3/4 cups sifted All-Purpose Flour or 2 cups sifted Cake Flour
3 teaspoons Baking Powder
1/2 teaspoon Salt
2 beaten Egg Yolks
1 1/4 cups Milk
1/2 cup Vegetable Oil
2 stiff-beaten Egg Whites
Directions
In a large bowl, sift together dry ingredients.
Combine egg yolks and milk. Stir into dry ingredients. Stir in oil.
Fold in egg whites, leaving a few little "fluffs". Do NOT overmix!
Bake in a pre-heated waffle baker.
Enjoy!
Variations
Buttermilk Waffles: substitute buttermilk for sweet milk. Add 1/2 teaspoon baking soda and cut baking powder to 2 teaspoons.
Cheese Waffles: Cut oil to 2 Tablespoons; add 1/2 cup shredded cheese of your choice.
Pecan Waffles: Sprinkle a few chopped pecans over batter before closing the waffle baker.
