Chicken and Yellow Squash Casserole

I'm pretty sure I stumbled upon this recipe on TikTok. You will just have to trust me that this tastes sooo good! It's often in the week's rotation in the summer.



Ingredients

  • 1 pound Ground Chicken (you can easily use 2 pounds if you want more protein/meat)

  • 3 medium-large Yellow Squash, sliced

  • 1 medium Vidalia Onion, sliced

  • Salt, to taste

  • Black Pepper, to taste

  • Garlic Powder, to taste

  • 1 cup Mayonnaise

  • 1 cup Sour Cream

  • 2 sleeves of Ritz (butter) Crackers

  • 1 stick Butter, melted


Directions

  • Preheat over to 350º.

  • Brown your chicken in a large, deep frying pan.

  • Once this is about 3/4 of the way cooked, add squash and onion. Season with salt, pepper, and garlic powder. Cover and cook for about 10 minutes.

  • Stir together the mayonnaise and sour cream.

  • Transfer the chicken and squash mixture to a 9" x 13" baking dish.

  • Add the mayo-sour cream mixture and stir into the chicken and squash. Yes, in the baking dish!

  • Crush one sleeve of the butter crackers and stir into the chicken and squash mixture.

  • Crush the other sleeve of butter crackers and stir into the melted butter. Spread over chicken and squash mixture.

  • Baked for 30 minutes, or until bubbly and lightly browned on top.
