Chicken and Yellow Squash Casserole

I'm pretty sure I stumbled upon this recipe on TikTok. You will just have to trust me that this tastes sooo good! It's often in the week's rotation in the summer.

Ingredients
1 pound Ground Chicken (you can easily use 2 pounds if you want more protein/meat)
3 medium-large Yellow Squash, sliced
1 medium Vidalia Onion, sliced
Salt, to taste
Black Pepper, to taste
Garlic Powder, to taste
1 cup Mayonnaise
1 cup Sour Cream
2 sleeves of Ritz (butter) Crackers
1 stick Butter, melted
Directions
Preheat over to 350º.
Brown your chicken in a large, deep frying pan.
Once this is about 3/4 of the way cooked, add squash and onion. Season with salt, pepper, and garlic powder. Cover and cook for about 10 minutes.
Stir together the mayonnaise and sour cream.
Transfer the chicken and squash mixture to a 9" x 13" baking dish.
Add the mayo-sour cream mixture and stir into the chicken and squash. Yes, in the baking dish!
Crush one sleeve of the butter crackers and stir into the chicken and squash mixture.
Crush the other sleeve of butter crackers and stir into the melted butter. Spread over chicken and squash mixture.
Baked for 30 minutes, or until bubbly and lightly browned on top.
